Elk and Other Stuff

Finally got the elk trim taken care of and now know the easy way to do the identical 60-lb. block of deer trim!  Love this elk trim.  Looks to be mainly from the leg so it's like nice meat packages encased in sinew with some tendons and other connective tissue.  Chance loves the fresh tendons and we love seeing her take 20 or 30 chews to get a piece of meat off!

Making plans for co-op orders for this year.  
A supplier is now offering calf rib slabs so will definitely be getting those.  Will be nice to have not only some beef bones that are safe for Chance to have but also calf to give her since the calf will have different levels of vitamins and mineral than an adult cow.
Will be getting more of the elk and/or deer depending on freezer space and what we have the least of.
And thinking about getting some Emu if the supplier offers rib racks.

March 9 will mark the 1-year anniversary of the switch to prey model raw.  2012 was Chance's healthiest year ever with her only going to the vet once to have a lump checked and once for her annual checkup.
